Crab Dogs (Adapted from Rachael Ray)
3 tablespoons mayonnaise
1 tablespoons fresh lime juice
1/2 teaspoon grated lime zest
1/4 teaspoon ground cumin
2 cups broccoli slaw
3 tablespoons chopped fresh cilantro
8 ounces lump crabmeat, picked over
salt and fresh ground pepper to taste
4 whole wheat hot dog buns
3 tablespoons chopped fresh dill
In a large bowl, whisk together mayonnaise, lime juice, lime zest and cumin. Add the broccoli slaw and cilantro - toss well and then fold in crab. Season to taste with salt and pepper.
Evenly divide the mixture between 4 buns and sprinkle each with the chopped dill.
Makes about 4 servings.
