Curry Turkey Salad

Curry Turkey Salad (Adapted from CL)

2 tablespoons sour cream
2 tablespoons plain yogurt
1 tablespoon fresh lime juice
1 tablespoon honey
1/2 teaspoon curry powder
1/2 teaspon hot madras curry powder
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 cups chopped cooked turkey
1 cup red grapes, halved
1/2 cup diced celery
1/4 cup chopped red onion
4 whole-wheat pitas
4 tablespoons coarsley chopped cashews

In a large bowl, whisk together sour cream, yogurt, lime juice, honey, curry powders, salt and pepper. Fold in chopped turkey, grapes, celery and onion. Cut each pita in half and evenly divide the salad between them. Sprinkle the chopped cashews evenly over the tops.

  1. Thank you for this nice recipe. I will make it for Sunday supper. I have a cooked a chicken in the fridge, so this will be perfect. Get out of the house a little bit this weekend, since the workers are gone Joe,it will be good for you, I know what you are going through, when we had our kitchen done over, I hade 4 little kids looking at me every meal time, they were wondering what happened
    to their mother, McDonalds in our livingroom, BurgerKing on the front steps,frozen pizza in our rooms,ya, that's what it was. This too shall pass. Rita
