Garlic Fries

Garlic Fries (Adapted from CL)

3 pounds russet potatoes, cut into 1/4" thick strips
1 1/2 tablespoons canola oil
3/4 teaspoon salt
2 tablespoons butter
8 garlic cloves, minced
2 tablespoons finely chopped fresh parsley
3 tablespoons fresh grated Parmesan cheese

Preheat oven to 400

In a large bowl, add potatoes - drizzle with oil and season with salt. Toss well to combine. Place potatoes in a single layer on a baking sheet coated with nonstick spray. Bake, turning after 20 minutes, until the potatoes are tender and golden, about 50 minutes.

In a large skillet, add butter and garlic - cook over low heat 2 minutes, stirring constantly. Add golden potatoes, parsley and cheese - toss well to coat.

Makes about 4 to 6 servings.
