Orange Beef Stir-Fry (Adapted from Everyday Food)
1 cup brown jasmine rice
1/4 cup fresh orange juice
1 tablespoon rice vinegar
1 tablespoon soy sauce
1 tablespoon brown sugar
16 ounces top round steak, cut thin strips
1 tablespoon cornstarch
Coarse salt and ground pepper
16 ounces broccoli (about 1 bunch), florets broken into small pieces - leave out stems or trim off the tough outsides and use the tender insides
2 tablespoons canola oil
1/2 cup chopped roasted red bell pepper
Cook rice according to the instructions on your package.
In a small bowl, whisk together orange juice, vinegar, soy sauce and sugar.
Sprinkle the strips of beef with cornstarch and toss to coat. Add salt and pepper to taste.
Steam or cook (briefly) broccoli just until crisp tender - season with salt and pepper.
In a large skillet, add 1 tablespoon canola oil and heat over high. Add half the beef and cook until they turn brown - about 3 minutes. Remove beef but leave any juices behind in the pan. Repeat with remaining oil and remaining beef. When the beef is done this time, leave it in the pan. Return cooked strips of beef and broccoli to the pan. Pour in orange-juice mixture and bell pepper. Keep cooking over high heat until sauce thickens, 2 to 4 minutes. Serve mixture with cooked rice.
