Southeast Asian Grilled Flank Steak

Southeast Asian Grilled Flank Steak (Adapted from CL)

3 tablespoons fresh lime juice
1 tablespoon fish sauce
1 tablespoon granulated sugar
2 teaspoons Sriracha
1/2 teaspoon ground coriander
2 garlic cloves, minced
16 ounces trimmed flank steak
1/4 teaspoon salt

In a zip-loc bag, add lime juice, fish sauce, sugar, Sriracha, coriander and garlic. Add steak - remove excess air and seal the bag - place in the refrigerator and marinate for 24 hours, turning occasionally.

Preheat grill.

Remove steak from the marinade - place onto the grill and cook until desired degree of doneness, about 4 minutes per side for medium-rare. Transfer steak to a cutting board and sprinkle with salt - let stand for 5 minutes before thinly slicing across the grain to serve.

Makes about 4 servings.
