Spicy Asian Slaw

Spicy Asian Slaw (Adapted from CL)

1 cup matchstick-cut carrots
1/2 cup thinly sliced green onions
16 ounce package broccoli slaw
2 1/2 tablespoons seasoned rice vinegar
2 tablespoon creamy peanut butter
2 tablespoons low-sodium soy sauce
1 tablespoon fresh lime juice
1 tablespoon canola oil
2 teaspoons sambal oelek
3 tablespoons chopped dry-roasted peanuts

In a large bowl, toss together carrots, onions and slaw.

In a medium bowl, whisk together vinegar, peanut butter, soy sauce, lime juice, oil and sambal oelek. Pour this mixture over the slaw mixture and toss well to coat. Sprinkle with chopped peanuts before serving.
