Almond-Honey Power Bars

Almond-Honey Power Bars (Adapted from Eating Well)

1 cup old-fashioned rolled oats
1/4 cup sliced almonds
1/4 cup sunflower seeds
1 tablespoon sesame seeds
1 cup unsweetened whole-grain puffed cereal
1/3 cup chopped golden raisins
1/3 cup chopped pitted dates
1/3 cup currants
1 tablespoon milled flaxseeds
1/4 cup natural almond butter
1/4 cup honey
3 tablespoons packed brown sugar
1/2 teaspoon cinnamon
1/8 teaspoon salt
1/2 teaspoon vanilla

Preheat oven to 350 degrees.

On a rimmed baking sheet, spread oats almonds, sunflower seeds and sesame seeds in an even layer. Place into the oven and bake, tossing ingredients halfway through, until lightly toasted, about 8 to 10 minutes. Scoop mixture into a large bowl - add puffed cereal, raisins, dates, currants and milled flaxseeds, tossing well to combine.

In a small saucepan, add almond butter, honey, sugar, cinnamon and salt - heat over medium-low, stirring, until the mixture begins to bubble lightly, about 2 to 5 minutes. Remove from the heat and stir in vanilla. Immediately pour mixture over the dry ingredients and mix together until well combined.

Scoop mixture into an 8" x 8" square baking pan coated with nonstick spray - firmly press mixture down with a spatula or greased hands to form an even layer. Set aside and allow mixture to cool completely before cutting into bars.

Makes about 8 to 10 bars.

  3. this looks amazing but do u have any great, healthy granola bar recipes that have no other sweeteners besides honey?

  5. Joe this looks delicious! Do you think it would be alright to sub the puffed cereal for more oats? Or would that adversely affect the texture/taste?

  6. M - Hmm, I'm not sure. They puffed rice has a good texture is is not as "heavy" as oats.
