Chocolate Chip Cookie Truffles (Adapted from Nestle)
16 ounces of your favorite crisp chocolate chip cookie dough (we used a pound of dough from this recipe), chilled
3 ounces cream cheese, softened
7 1/2 ounces (about 1 1/4 cups) chopped bittersweet chocolate, melted
Preheat oven to 350 degrees.
Using a tablespoon cookie scoop, drop balls of the dough onto baking sheets lined with parchment paper. Place into the oven and bake until the cookies are deep golden brown, about 12 to 16 minutes. Remove from the oven and transfer cookies to a wire rack to cool completely.
Break cookies to fit into the bowl of a food processor. Process mixture until cookies are ground. Add cream cheese and process until mixture is thoroughly combined and holds together. Shape the dough into 1" balls and place into the refrigerator to chill for 45 minutes. If the dough is too sticky to handle, place dough into the refrigerator to firm up before rolling.
Dip cookie balls into the melted chocolate and allow excess to drip off. Place each coated ball onto a baking sheet lined with parchment paper. Place baking pan into the refrigerator to set the chocolate. Store truffles in refrigerator.
Makes about 36 truffles.

Yum those look so good. I was going to make truffles this year for the holidays but ended up making chocolate bark instead. They are still on my to do list and this recipe looks like a great option to try.
