Gnocchi Gratin (Adapted from CL)
16 ounces pre-made gnocchi
1 tablespoon butter
1/3 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 cups plain soy milk
1/2 cup chicken broth
3 ounces shredded Gruyere cheese
1/3 cup chopped fresh chives
3 center-cut bacon slices, cooked and crumbled
1 pinch fresh grated nutmeg
1 ounce fresh grated Parmesan cheese
Preheat oven to 400
In a large pot of boiling salted water, cook gnocchi according to package directions. Drain well.
In a large saucepan, melt butter over medium heat. Stir in flour, salt, and pepper to pan and cook 1 minute. Slowly pour in milk and broth while constantly whisking to prevent lumps. Increase the heat and bring the mixture to a boil. Stirring constantly, cook until the mixture thickens - about 2-5 minutes. Remove from heat and stir in Gruyère, chives, bacon and nutmeg. Add gnocchi and gently stir to coat.
Scoop mixture into a 7 x 11" baking dish lightly coated with nonstick spray. Scatter grated Parmesan on top.
Bake until bubbly and the top is a light golden - about 20-25 minutes.
Makes 4-6 servings.
