Cinnamon-Apple Cake

Cinnamon-Apple Cake (Adapted from CL)

1 cup all-purpose flour
1/2 cup whole-wheat pastry flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 1/2 cups sugar
8 tablespoons unsalted butter, softened
6 ounces cream cheese, softened
1 teaspoon vanilla
2 large eggs
2 teaspoons cinnamon, divided
1/4 cup vanilla sugar
3 cups chopped and peeled apples

Preheat oven to 350 degrees.

In a medium bowl, whisk together flours, baking powder and salt.

In a large mixing bowl, beat together 1 1/2 cups sugar, butter, cream cheese and vanilla until very creamy and well combined, scraping down bowl as needed. Beat in eggs, one at a time, beating until well combined after each. Add flour mixture and mix just until combined.

In a small bowl, toss together remaining 1/4 cup sugar and cinnamon. In a medium bowl, toss together chopped apples and 2 tablespoons of the sugar and cinnamon mixture - stir apple mixture into cake batter. Scoop batter into a 9" springform pan coated with cooking spray - sprinkle the top with remaining sugar and cinnamon mixture.

Place into the oven and bake until a toothpick comes out mostly clean with a few moist crumbs attached and the cake sides begin to pull away from the edge of the pan, about 1 hour and 5 minutes to 1 hour and 15 minutes. Remove pan from the oven and place on a wire rack to cool completely before serving.

Makes about 10 to 12 servings.
