Strawberry Spring Salad

Strawberry Spring Salad (Adapted from CL)

3 tablespoons white wine vinegar
3 tablespoons water
1 tablespoon honey
2 teaspoons extra-virgin olive oil
1/8 teaspoon salt
1/8 teaspoon pepper
3 cups quartered strawberries
6 cups salad greens (we used Red Romaine)
2 tablespoons toasted pine nuts

In a large bowl, whisk together vinegar, water, honey, oil, salt and pepper.

Add berries and greens - toss gently to coat. Sprinkle with nuts to serve.

Makes about 4 servings.

  1. I will have to try this recipe with your dressing. I have a similar recipe that uses greens, strawberries, almonds, and crumbled bacon (I know -- bacon and strawberries??), but I've always used that Brianna's poppyseed dressing. Can't wait to try yours!

  2. Mmmmm. I have a recipe for strawberry spinach salad that I love. This is a nice variation that I will have to try. Aren't the berries outstanding this year!?
    BTW, I don't think I remember seeing a full shot of you before. I had no idea you are so young!! I may be old enough to be your mother!! Yikes!
