Mini Fruit and Sunflower Loaves

Mini Fruit and Sunflower Loaves (Adapted from CL)

1 cup whole wheat pastry flour
1 cup all-purpose flour
1 cup yellow cornmeal
2 teaspoons baking soda
1/4 teaspoon salt
2 cups vanilla yogurt
1/2 cup maple syrup
1/2 cup orange blossom honey
1/2 cup canola oil
1 teaspoon vanilla extract
1 teaspoon grated orange zest
1/3 cup chopped golden raisins
1/3 cup chopped dried cranberries
1/3 cup chopped dried cherries
1/2 cup sunflower seed kernels

Preheat oven to 350

In a large bowl, whisk together flours, cornmeal, baking soda and salt.

In a medium bowl, whisk together yogurt, maple syrup, honey, oil, vanilla and orange zest. Pour mixture into the dry ingredients and stir just until combined. Genlty fold in chopped dried fruit and sunflower seeds.

Evenly divde batter between 4 mini loaf pans lightly coated with nonstick spray. Bake for 30-40 minutes, rotating halfway through, until a toothpick placed in center comes out with a few moist crumbs attached. Carefully remove from the pans and place on a wire rack to cool completely.

  2. Joe, thanks for pointing this recipe out. I miss so many good ones when reading through all the food mags, so it's nice when you hand select the good ones ;).

    I am in love with Sunflower seeds right now and will have to give these a try.
