Smoky Corn and Black Bean Pizza

Smoky Corn and Black Bean Pizza (Adapted from Eating Well)

1 plum tomato, diced
1 cup canned black beans, rinsed
1 cup fresh corn kernels
2 tablespoons cornmeal
16 ounces whole-wheat pizza dough (I use this recipe for the dough, you can buy it already made)
1/3 cup barbecue sauce
4 ounces shredded smoked mozzarella

Preheat oven to 500

In a medium bowl, mix together tomato, beans and corn.

On a pizza peel or large baking sheet, scatter cornmeal on top. Stretch the dough into a rough 12" circle and lay it on top of the cornmeal.

Bake on a pizza stone, or on the baking sheet, for 4 to 5 minutes. You want it to be a little puffy and lightly golden on the bottom.

Carefully remove the crust. Spread barbecue sauce on and scatter with the tomato mixture and cheese. Place back in the oven and cook until the cheese melts and the bottom of the crust is browned - about another 4-5 minutes.
