White Chocolate Layer Cake

1 tablespoon butter, softened
1/2 cup all-purpose flour, sifted
1 ounces fine quality white chocolate, chopped
1/4 cup boiling water
2 tablespoons sour cream, room temperature
1 large egg yolk
1/2 teaspoon vanilla
1/3 cup sugar
1/8 teaspoon baking soda
1/8 teaspoon salt

Preheat oven to 350

Melt white chocolate in microwave at medium until smooth. Let cool until luke warm.

Melt butter at medium power in microwave. Let the boiling water cool slightly, then add it to the butter. Whisk in the sour cream, egg yolk, and vanilla.

In a medium bowl, whisk together flour, sugar, baking soda and salt. Add the sour cream mixture and the white chocolate. Whisk until combined and smooth.

Evenly scoop batter into tins. Bake for 12-18 minutes, until the tops spring back when lightly touched in the center or a when a toothpick placed in the center comes out with a few moist crumbs.

Remove and place on a wire rack to cool.
