Grilled Bacon-and-Herb Grit Cakes

Grilled Bacon-and-Herb Grit Cakes (Adapted from CL)

4 cups hot cooked grits
2 ounces shredded sharp white cheddar cheese
1 tablespoon minced fresh thyme
2 teaspoons chopped fresh parsley
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
4 center-cut bacon slices, cooked and crumbled

In a large bowl, stir together hot grits, cheese, thyme, parsley, garlic powder, pepper and back. Scoop the grits into a 10" springform pan lightly coated with cooking spray. Using an off-set spatula, spread the mixture evenly. Cover and chill 1 hour or until completely cool.

Preheat grill and lightly coat grates with oil.

Invert grits onto a cutting board and cut into wedges

Place wedges on grill rack and cook 5 minutes on each side or until lightly browned and thoroughly heated.

Served with Five-Spice Tilapia with Citrus Ponzu Sauce
