Chocolate And Peanut Butter Filled Peanut Butter Blondies (Adapted from Hershey's)
12 tablespoons peanut butter
4 tablespoons butter, softened
1/2 cup packed light brown sugar
1/4 cup granulated sugar
1 large egg
2 tablespoons vanilla soy milk
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1/8 teaspoon salt
3/4 cup bittersweet chocolate chips
1/2 cup peanut butter chips
Preheat oven to 350
In a large bowl, cream together peanut butter, butter, brown sugar and granulated sugar. Mix in egg, milk and vanilla until well combined.
In a medium bowl, whisk together flour, baking soda and salt. Mix into creamed peanut butter until combined.
Place half of the mixture into a 9" baking dish coated with nonstick spray. Scatter bittersweet and peanut butter chips over the top. Drop small dollops of the remaining batter over the mixture to cover the top.
Bake until lightly browned and set - about 20 to 30 minutes. Place on a wire rack to cool completely before cutting.

Those look great. If you don't mind me asking how do you get such a clean cut. Your brownie/bar type recipes certainly come out looking better than mine. Do you line the pan with parchment first? It seems that whenever I try to remove brownies from the pan (cut into pieces wih a knife and then remove with the help of a spatula) -- never is clean cut and often get squooshed a bit when removing. Does your brownie recipes flip out like a cake is supposed to.

Anon - I would usually line the pan with foil and just lift out the brownies - this makes cutting and getting them out of the pan so easy!

ReplyDeleteI've just discovered your blog and I'm not even sure if you'll be checking posts that are this old, but...if you do, can I just use regular milk instead of the soy milk? And would it be the same amount? I'm in Kenya so getting soy milk would be a bit of a challenge :)

ReplyDeleteAnon in England - Since the texture of peanut butter is nothing like the chips, I would probably not make that substition. Maybe just add more chocolate chips?
