Orange Cranberry Nut Bars (Adapted from BBCL)
2 eggs
1 cup sugar
6 tablespoons butter, melted
2 teaspoons fresh grated orange zest
1 cup all-purpose flour
1/2 teaspoon salt
1 1/4 cups fresh or frozen cranberries
1/2 cup chopped sliced almonds, toasted
To glaze
1 cup powdered sugar
2 tablespoons orange juice
Preheat oven to 350
In a large mixing bowl, beat eggs until thick and they fall back in a ribbon. Slowly add sugar and beat until thoroughly blended. Mix in butter and zest.
Stir in flour. Genty fold in cranberries and almonds - just until combined. Scoop mixture into an 8" pan coated with nonstick spray.
Bake for 35-45 minutes or until golden brown and a toothpick inserted into the center comes out mostly clean - a few crumbs attached is okay. Remove and place on a wire rack to cool completely.
For the glaze
In a small bowl, whisk powdered sugar and orange juice until smooth. Drizzle over bars.

Well, I got up early and made these bars... and they were SO tasty! My honey loves dried cranberries (or "cranbunnies," as they are known 'round here), but I, too, had a bag of formerly-fresh in my freezer making me sad every time I opened the door, so... VOILA!
ReplyDeleteCONFESSION: I DID chop the cranberries, and used pecans instead of almonds (allergy issues, dontcha know), AND used half cake flour (but the other half was King Arthur White Whole Wheat, honest!) for lightening, but these were a HUGE hit... at least on the way out the door with coffee.
