Grated Carrots with Cumin-Orange Dressing(Adapted from CL)
1/2 teaspoon ground cumin
3 cups grated carrots
1/4 cup golden raisins
3 tablespoons fresh orange juice
1 tablespoon fresh lemon juice
2 teaspoons olive oil
1/4 teaspoon salt
Start out by toasting the cumin in a small skillet over medium heat. Cook about 2 minutes or until quite fragrant - be sure to stir often.
In a medium bowl, combine carrots, raisins, orange juice, lemon juice, oil and salt. Add toasted cumin and stir to mix together.

This sounds just fantastic. Love the idea of the cumin with carrots. I'm going to try it.
ReplyDeleteThere's a similar recipe in the last issue of Eating Well, but theirs had a little cornstarch in it to make a sauce, and I don't think it had the raisins. Looks good!
