Chicken-Peanut Chow Mein

Chicken-Peanut Chow Mein(Adapted from CL)

1 cup matchstick-cut carrot
1 cup snow peas, trimmed
12 ounces dry chuka soba noodles
8 ounces boneless, skinless chicken breast, sliced into thin strips
3 tablespoons soy sauce, divided
3/4 cup chicken broth
2 tablespoons oyster sauce
1 teaspoon sugar
1/4 teaspoon crushed red pepper
2 teaspoons freshly grated ginger
1 cup sliced green onions
1/4 cup dry-roasted peanuts, coarsely chopped

In a medium pot of boiling water, cook carrots, snow peas, and noodles for 3 minutes. Drain.

In a large skillet, heat 2 teaspoons dark sesame oil over medium-high heat. Add chicken and 1 tablespoon soy sauce to pan. Stir-fry 3 minutes. Remove chicken from pan and cover to keep warm.

In a small bowl, whisk together the remaining 2 tablespoons soy sauce, broth, oyster sauce, sugar, and pepper. Heat remaining 1 teaspoon oil over medium-high heat. Add mushrooms and ginger to pan. Stir-fry for 3 minutes. Add broth mixture, and cook for 1 minute. Add noodle mixture and chicken to pan. Cook 1 minute, tossing to combine. Sprinkle with onions and peanuts.
