Green Pumpkinseed and Cranberry Crispy Bars

Green Pumpkinseed and Cranberry Crispy Bars (Adapted from CL)

1/2 cup pepitas
4 tablespoons butter, melted
8 ounces miniature marshmallows
1 teaspoon vanilla extract
1/8 teaspoon salt
5 cups Rice Krispies
1 cup dried cranberries

Toast pepitas in a large nonstick skillet over medium-high heat for about 4 minutes, or until seeds begin to pop and turn lightly brown. Be sure to stir frequently. Remove from heat and cool.

Melt butter in a large saucepan over medium heat. Stir in marshmallows and cook until smooth, stirring constantly. Take pan off of heat and carefully stir in vanilla and salt. Quickly mix in the toasted pepitas, Rice Krispies and cranberries. Scoop mixture into a 9x13" baking dish lightly coated with cooking spray.

Evenly press mixture into the pan and let cool completely before cutting into squares.
