Barbecue Meat Loaf
Barbecue Meat Loaf (Adapted from CL)
24 ounces ground sirloin
1/2 cup panko breadcrumbs
1/2 cup chopped onion
1/3 cup barbecue sauce, divided
1 tablespoon mustard
1 1/2 teaspoons chili powder
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 large egg
Preheat oven to 350
In a large bowl, mix together ground sirlion, panko, onion, 2-3 tablespoons barbecue sauce, mustard, chili powder, garlic, salt, pepper and eggs.
Scoop out the mixture and place on a broiler pan coated with cooking spray. Shape mixture into a 9x5" loaf. Using a pastry brush, spread remaining barbecue sauce over the top.
Bake for about 1 hour or until a thermometer registers around 160. Let stand 10 minutes before slicing.

ReplyDeleteNext time, to counter the dryness of the meatloaf, try adding 1/3 to 1/2 a cup or so of buttermilk to the mix. It'll add moisture but very little fat (buttermilk being naturally low fat).
