Ground Turkey and Tofu
14 ounce package water-packed firm tofu, drained and cut into 1-inch cubes
1/8 teaspoon salt
1/8 teaspoon freshly ground white pepper
1 pound ground turkey breast
1/4 cup hoisin sauce
1 tablespoon rice vinegar
1 tablespoon soy sauce
2 teaspoons sugar
1 teaspoon cornstarch
1/4 teaspoon crushed red pepper
3 garlic cloves, minced
2 teaspoons olive oil, divided
1/2 cup frozen baby green peas, thawed
1/4 cup chopped green onions
Set tofu on several layers of paper towels and cover with additional paper towels. Let stand 30 minutes, pressing down occasionally to dry off.
In a large bowl, mix salt, white pepper, and turkey in a large bowl.
In a medium bowl, whisk together hoisin, vinegar, soy sauce, sugar, cornstarch, pepper, and garlic.
Heat 1 teaspoon oil in a large nonstick skillet over medium-high heat. Add tofu and cook 6 minutes or until browned on all sides. Remove tofu from pan and cover to keep warm. Add remaining 1 teaspoon oil in the pan and add turkey mixture. Cook 3 minutes or until turkey loses its pink color, stirring to crumble. Stir in hoisin mixture, tofu, and peas. Cook 2 minutes or until thoroughly heated. Sprinkle with green onions.

ReplyDeleteI've given tofu more flavour by marinating it prior to finishing it - next time (if there is one) brown it, then let it sit in the sauce mixture, stirring occasionally, until you're ready to add them.
ReplyDeleteI used only 1/2 lb. turkey - not from the breast, but the usual 7% fat kind - and found it necessary to add a bit of water at the end to avoid sticking. I also added the peas at the last moment. I like them barely cooked. This was really good - a keeper.
ReplyDeleteDelicious! Marinate the tofu beforehand for some extra kick. Cut the tofu cubes up smaller as well.
