Old-Fashioned Apple-Nut Crisp(Adapted from EW)
6 cups peeled and thinly sliced granny smith apples
1/2 cup plus 3 tablespoons packed brown sugar, divided
1 tablespoon fresh lemon juice
1 teaspoon cinnamon, divided
2/3 cup whole wheat flour
1/2 cup rolled oats
2 tablespoons cold butter, diced into small chunks
2 tablespoons canola oil
2 tablespoons apple juice concentrate
1/3 cup roughly chopped hazelnuts
Preheat oven to 375
In a large bowl, combine sliced apples, 3 tablespoons brown sugar, lemon juice and 1/2 teaspoon cinnamon. Toss well to coat. Move mixture into an 8" square baking dish coated with cooking spray. Cover and bake for 30 minutes.
In a medium bowl, mix together flour, oats, 1/2 cup brown sugar and 1/2 teaspoon cinnamon. Using a pastry blender, cut in the cold butter until it resembles small peas - just make sure there are no large pieces - feel free to use your fingers if you don't have a pastry blender. Mix in the oil, apple juice concentrate and nuts - toss until completely combined.
Removing baking dish from over and uncover. Sprinkle the flour/oat mixture evenly on top of the apples. Return to the oven and bake for about 30 minutes, until the apples are soft and the liquid is bubbling. Cool at least 15 minutes before cutting.
