Have you had a healthy snack today?

We sure did! I was looking for a different muffin to bake up for snacks other than our normal one. What initially caught my eye in this recipe was that it called for 1 whole orange that you put in the blender with the rest of the wet ingredients. I thought that was kind of unusual as I've never done something like that (minus the seeds if you couldn't find a seedless one). Orange Bran Flaxseed Muffins are packed full of healthy grains, fruit and a bit of brown sugar for the right amount of sweetness. The smell these gave off while baking was amazing! The texture is as expected from the use of oat/wheat bran and ground flaxseed, but it doesn't have a rubbery texture and I don't find they are that heavy either.

Keeping in line with the healthy trek we started on today, tonight's dinner was Maple-Balsamic Pork Tenderloins(CL). A side of Green Salad with Apples and Maple-Walnut Dressing(CL) went very well with the light and very tender meat. I needed to buy a bottle of Walnut oil for this - Glad I did, but I wish it came in a smaller container! I had a request for the sour cream cheddar drop biscuits, so I mixed that up right before the meat was done so that rounded out the meal.

  2. Now this really makes me wish that my husband could get over his distate of sweet/savoury. Sigh.

  3. Looks delicious as usual, Joe!! How did you really like the maple dressing for the salad? I've looked at that recipe a few times and wondered if the dressing might be overpowering. My favorite CL salad is the Field Salad with Snow Peas, Grapes & Feta...have you ever tried it?

  6. Oh, I hate being out of touch. Everything you have posted since I was gone looks great. Those fish tacos are on my (very short) menu for the week. Don't you just love those drop biscuits? We eat them all the time and they are so easy to throw together.

I like your blog a lot, it is very nice written and the pictures are great!
Today what caught my attention was the nice looking muffins you posted! I love muffins, specially the healthy ones! We eat muffins for breakfast almost everyday at home, always homemade muffins, and I love the ones with whole wheat flour and flaxseeds. Yours look so good, is there any chance you could share the recipe?! My e-mail is anacardia@nc.rr.com
    Thank you so much!

  8. Maureen - its from the Aug 2005 issue! Thanks =) Our camera is a Kodak DX 4530

Ruth - I'll post the muffin recipe tonight

s'kat - Sorry to hear your husband's distate of the mix - I really like it!

Val - I was suprised that I liked the dressing. I used whole grain mustard so I think that cuts the sweetness down and with the mixed greens (some being bitter) it didn't overpower. I haven't tried that salad - I will have to check it out!

Hey Randi! The cake sounds good! I've only made carrot cake a couple times.

Alice - Thanks! I'll post it later this evening on today's update

Punky - Glad your back! Hope you had a safe trip! The biscuits are wonderful - fast and easy!

Hi Ana - Thanks for visiting and the nice comments! Look for the recipe this evening.

  9. Joe,

I have been reading your blog for a few weeks now and I finally decided to tell you how much I enjoy it. You have absolutely inspired me to cook more. I've been trying to cook at least 2 new recipes a week, which isn't easy with my 11-month old son hanging onto my legs while we are in the kitchen!
I tried the Maple Balsamic recipe from CL and just used boneless pork chops. I thought it was delicious and have made it twice in the last 2 weeks.
Thanks for the inspiration! Keep up the good work!
