What is in that pizza?!

Remember when we talked about the fresh corn and poblano peppers? Yup, thats right! They went into a pizza of all things! Tonight's dinner is Roasted Fresh Corn, Poblano, and Cheddar Pizza. We used a whole wheat crust instead of what was suggested. This was our first time with Poblanos and it won't be the last! The filling has eggs in it, which was definetly different, but really held everything together. We were a little apprehensive but glad we tried this out!



Since tomorrow is Wednesday I started the morning out by making Jeff treats to bring into the office. I was really wanting to make something like cheesecake so we went with Mini Peanut butter cheesecakes. These are perfect portion sized and such a great combo with the reese's hidden inside. I used nilla wafers as the crust - I would of normally used a graham cracker crust but alas, we didnt have any crackers!

  1. I love the cheesecakes...I often make mini cakes like that, and use the Nilla wafers, too...but the peanut butter cups? Inspired!

  3. Gorgeous pizza! With the eggs, that would be a great entry for the End-of-the-Month-Eggs-on-Toast-Extravaganza! All this baking during the day ... do you work? ;) The Husband loves the mini-cheesecakes. I make ours with an Oreo as the crust, and cherries on top. He can polish off 5+ in one sitting, usually eating the whole batch himself. I love the idea of the Peanut Butter Cup in the middle. :)

  7. Thanks for the nice comments everyone! I was a little afraid when the pizza went in but it turned out pretty good! I'm really glad we used the whole wheat dough over premade stuff.

    I like the idea of the oreo in the middle in the cheesecakes! I do another version of these, a little different, but use fruit on top with nothing inside.

    No cheesecakes came home so I guess thats a good sign! Hee hee!
