Salty Oatmeal Cookies

Salty Oatmeal Cookies(Adapted from King Arthur Flour CC)

8 tablespoons butter, softened
8 tablespoons organic shortening
1/2 cup packed brown sugar
1/2 cup granulated sugar
1 large egg
1 1/2 cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla extract
3 cups old-fashioned rolled oats

In a large mixing bowl, add butter, shortening and sugars. Cream together until light and fluffy. Add in egg and beat until combined.

In a medium bowl, whisk together the flour, salt and baking soda. Mix flour into the creamed butter. Add in the vanilla and oats, mixing just until combined. Cover with plastic wrap and place in the refrigerator for about an hour.

Preheat the oven to 375

Drop dough using a tablespoon cookie scoop onto parchment lined baking sheets. Flatten each ball to about 1/4" thick with your fingers. Sprinkle each with a light coating of kosher salt.

Bake for 8-10 minutes, rotating half way through, until the edges turn a light golden. Remove and set baking pan on a cooling rack for 5 minutes. Transfer to a wire rack to cool completely.
