Chocolate Sugar Cookie Dough

Chocolate Sugar Cookie Dough(Adapted from One Smart Cookie)

1/4 cup butter, softened
2/3 cup sugar
1 large egg white
1 teaspoon vanilla extract
1 cup flour
1/4 cup dutch cocoa
1/4 teaspoon baking soda
1/4 teaspoon salt

Beat butter and sugar in a large bowl until creamy and well combined. Add egg white and vanilla and beat until smooth.

In a small bowl, whisk flour, cocoa, baking soda, and salt. Stir the flour into the sugar mixture just until the dough comes together.

If making the ribbon cookies, use the dough from this point.

For just making cookies, shape the dough into an 6" long log and then wrap in plastic wrap. Freeze for at least 3 hours.

To bake - Preheat oven to 350. Slice log into 1/4" slices and place on a parchment lined baking sheet. Bake for 8-10 minutes, until just set. Remove cookies to a wire rack and cool completely.
