Crunchy Peanut Butter and Granola Cookies

Crunchy Peanut Butter and Granola Cookies(Adapted from King Arthur Flour CC)

1/3 cup butter, softened
2/3 cup dark brown sugar
1/2 cup peanut butter, smooth or chunky
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1 large egg, lightly beaten
1 teaspoon vanilla extract
1/2 cup flour
2 cups granola
1/2 cup dry roasted salted peanuts, chopped
If your granola has no dried fruit, add up to 1/2 cup of whatever kind you like.

Preheat oven to 350

In a large mixing bowl, beat the butter, brown sugar, and peanut butter until light and fluffy. Beat in the baking powder, cinnamon, ginger and salt until smooth. Mix in the egg and vanilla, then combine until thoroughly incorporated. Gently stir in the flour, then mix in the granola and peanuts. Add the dried fruit now if your granola had none.

Using a tablespoon cookie scoop, drop mounds of dough onto parchment lined baking sheets. Wet your fingers and flatten the cookies some as they do not spread much. Bake for 10-12 minutes, until the edges turn golden. Let sit a minute or two before moving to a wire rack to cool completely.

Makes about 34 medium sized cookies

  1. i just made these cookies and they are sooooo good! Thanks for the recipe. I didn't put in peanuts or dried fruit and I used a choco-granola. Yum, thanks again.
