Pineapple-Coconut Granola Squares

1 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon fresh grated nutmeg

2 cups old-fashioned rolled oats
1 1/2 cups crisp rice cereal
2/3 cup flaked sweetened coconut
1/2 cup dried pineapple, coarsley chopped

1/4 cup brown sugar
1/4 cup maple syrup
1/4 cup Lyle's Golden Syrup or Honey
2 tablespoons nutella
1 egg white
1 tablespoon soy milk
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract

In a small bowl, combine the flour, baking soda, and nutmeg. In a medium bowl, mix together the oats, cereal, coconut, and dried pineapple.

In a large bowl, whisk together the remaining ingredients (brown sugar through almond) until well combined. Stir in the flour mixture until combined. Fold in the oat mixture until thoroughly coated.

Press into a 13x9-inch baking pan coated with nonstick cooking spray. Bake at 350 degrees for 18 minutes, or until golden brown. Immediately score the surface with shallow cuts, making rectangular squares. When completely cooled, cut along the scored lines. Makes 18 squares
