Canadian Bacon and Egg Sandwiches

Canadian Bacon and Egg Sandwiches(Adapted from CL)

1 teaspoon canola oil, divided
8 slices Canadian bacon
4 large eggs
8 slices toasted thick whole wheat bread

In a large skillet, heat 1/2 teaspoon canola oil over medium-high heat. Add Canadian bacon to pan and cook 1 minute on each side or until lightly browned. Remove from the pan and set aside.

In the same skillet, add 1/2 teaspoon canola oil and reduce heat to medium. Add eggs to pan and cook about 1-2 minutes on each side. Place one toasted bread slice down and top with 2 slices canadian bacon. Top with one egg and season with salt and pepper. Place remaining bread slice on top. Repeat with remaining bacon and eggs.

Makes 4 sandwiches
