Chewy Ginger Cookies

Chewy Ginger Cookies

3/4 cup butter, softened
1 cup sugar
1/4 cup molasses
1 egg
2 teaspoons baking soda
2 1/4 cups flour
1/2 teaspoon ground cloves
Rounded 1/2 teaspoon ground ginger
2 teaspoon cinnamon
1/2 teaspoon salt
3 ounces crystallized ginger, chopped coarsely

Preheat oven to 375

In a large mixing bowl, combine softened butter, sugar, molasses and egg.

In a medium bowl, whisk together the flour, baking soda, and spices. Stir into the wet ingredients and mix well. Fold in the chopped ginger. Chill for at least 1 hour.

Scoop out the dough to about 1" balls and gently roll in granulated sugar. Place on parchment lined cookie sheet about 2 inches apart. Bake 8-10 minutes. Let cool on cookie sheets for about 5 minutes before moving to a wire rack.

Makes about 36 cookies

  1. I bet these are really good. The recipe is almost the same as a cookie of the month I did last year. Your addition of crystallized ginger probably gives it quite the zing, I would imagine! :)

  2. The cookies look wonderful. I've been trying to find one more kind of cookie to bake this holiday season and think I may have just found it.

  3. Alicat - Yeah! I really liked the chunks of ginger!

Biscuit Girl - Thanks! Let me know if you make them!

  4. I absolutely loved these cookies (almost as much as I love your website)! They stayed chewy, without getting gummy, and were a hit at my office. The candied ginger was something I had never tried before, and ended up loving!

Thanks for all the great recipes!

  5. Elizabeth - Thanks, I like to hear feedback on the recipes!

  6. VERY VERY good cookies. Chewy and perfect in consistency. Exactly what I was searching for. I've already made them twice in 2 weeks.
Everyone that tried them loved them.

  7. Has - fantastic! Thanks for the feedback.
