Pan-Seared Pork Chops with Dried Fruit

Pan-Seared Pork Chops with Dried Fruit(Adapted from CL)

4 center-cut boneless pork chops
1 teaspoon olive oil
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/3 cup sliced shallots
1 cup chicken broth
6 ounces dried mixed fruit bits - I used apples, cherries, pineapple, golden raisins, and apricots

Heat oil in a large nonstick skillet over medium-high heat. Season both sides of pork with salt and pepper. Add pork to pan and cook 3 minutes on each side or until lightly browned. Remove from pan and cover to keep warm.

Add shallots to pan and cook 1 minute, stirring constantly. Add broth and fruit - cover and simmer 1 minute. Place pork back in the skillet and cook until thoroughly heated, 1-2 minutes.

  1. Hi, I've never cooked pork before (but love it in restaurants). How thick were the boneless chops. There are so many different types to choose from at WFoods, I think that is why I hesitate since not sure how long to cook etc.

    Hmm I think they were about 1/2" thick or so! Hope that helps! Do you have a meat thermometer?
