Potluck Potato Casserole

Potluck Potato Casserole(Adapted from CL)

1 1/2 cups sour cream
10.75 ounce can cream of chicken soup
1/2 cup chicken broth
2 tablespoons grated onion
2 tablespoons butter, melted
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
1/8 teaspoon ground red pepper
5 ounces shredded sharp white cheddar cheese
30 ounces frozen hash browns, thawed
1 cup coarsely crushed cornflakes
2 tablespoons chopped fresh parsley

Preheat oven to 350

In a medium bowl, stir together sour cream, cream soup, chicken broth, onion, melted butter, black pepper, salt and red pepper.

In a large bowl, mix together the thawed hash browns and cheese. Stir in the sour cream mixture.

Evenly spread into a 13x9" baking dish coated with cooking spray. Sprinkle cornflakes over potato mixture.

Bake until bubbly, about 1 hour. Sprinkle with chopped parsley.
