Asian-Style Meat Loaves

Asian-Style Meat Loaves(Adapted from CL)

3 1/2 ounces plain rice crackers *I used the Ka-Me brand
1 pound ground turkey breast
1/2 pound lean ground pork
1 cup chopped green onions
1/2 cup hoisin sauce, divided
1/2 cup chopped red bell pepper
1/2 cup drained chopped canned water chestnuts
1 tablespoon soy sauce
1 tablespoon grated fresh ginger
1/4 teaspoon salt
3 garlic cloves, minced
2 large egg whites

Preheat oven to 350

Finely chop crackers in a food processor or crush them in a ziploc bag with a rolling pin.

In a large bowl, mix together cracker crumbs, turkey, pork, green onions, 1/4 cup hoisin, red bell pepper, water chestnuts, soy sauce, ginger, salt, garlic and egg whites.

Shape mixture into 6 loaves on a broiler pan coated with cooking spray. With a pastry brush, spread 2 teaspoons hoisin over top of each meat loaf. Bake for 45 minutes or until done (if you have a meat thermometer take them out at around 165.) Let stand 5 minutes.
