Individual Spinach-Asiago Gratins

Individual Spinach-Asiago Gratins(Adapted from CL)

1 teaspoon butter
1/2 cup finely chopped sweet onion
2 garlic cloves, minced
10 ounces fresh spinach, coarsely chopped
1 1/2 tablespoons all-purpose flour
1 cup milk
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
scant 1/8 teaspoon freshly grated nutmeg
1 ounce freshly grated Asiago cheese
1/2 cup panko breadcrumbs
1 tablespoon finely chopped fresh parsley

Preheat broiler

Coat a large nonstick skillet with cooking spray and heat pan over medium-high heat. Add butter, onion and garlic - sauté 3 minutes or until tender. Add half of the spinach and cook 2 minutes, until spinach begins to wilt, stirring frequently. Add remaining half of spinach and cook 2 minutes, until spinach wilts, stirring frequently. Remove from the stove.

In a small bowl, add flour and gradually pour in the milk while whisking. Stir flour mixture into spinach mixture and add salt, pepper, and nutmeg. Cook over medium-high heat 3 minutes or until thick and bubbly, stirring constantly. Remove from the stove. Add cheese, stirring until cheese melts. Evenly distribute the mixture between 4 ramekins coated with cooking spray. Set ramekins on a baking sheet.

In a small bowl, combine panko and parsley. Sprinkle about 2 tablespoons breadcrumb mixture over each serving. Broil 1 minute or until browned.
