Almond Toffee Bars

Almond Toffee Bars(Adapted from King Arthur Flour BC)

Base

16 tablespoons butter, softened
1 teaspoon almond extract
1/2 cup confectioners' sugar
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt

Toffee
Topping

1 cup packed brown sugar
5 tablespoons plus 1/3 tablespoon butter
1/4 cup milk
1 cup sliced unblanched almonds

Preheat oven to 350

Base

In a medium mixing bowl, beat 16 tablespoons butter until creamy, then add the almond extract and the confectioners' sugar. Beat well.

In a medium bowl, sift together the flour, baking powder and salt. Stir dry ingredients into the wet.

Press the dough into an ungreased 15X10" baking sheet, coming up the sides just a little. Bake for 15 to 20 minutes or until golden brown. Set on a wire rack.

Topping

In a medium saucepan, combine the brown sugar, butter and milk. Stir over low heat just until the brown sugar is dissolved and the butter has melted. Spread this mixture over the baked base. Scatter sliced almonds over the top.

Preheat broiler

Place baking sheet under the broiler until the top bubbles, no more than 3 minutes. After about 2 minutes, open the over door and keep close watch. As soon as the nuts are golden brown, remove the bars from the oven. Let cool completely before cutting.
