8 ounces dry whole wheat macaroni, cooked
1 cup diced red bell pepper
1 cup diced Granny Smith apple
3 tablespoons chopped walnuts, toasted
1/3 cup sour cream
1 tablespoon mayonnaise
2 tablespoons champagne vinegar
3/4 teaspoon salt
2 cups arugula, chopped
2 ounces crumbled Gorgonzola cheese
In a large bowl, combine cooked macaroni, bell pepper, apple, and toasted walnuts.
In a small bowl, whisk together sour cream, mayonnaise, vinegar and salt. Pour over macaroni mixture, gently tossing to coat. Stir in arugula, and sprinkle with cheese.
